On the evening of Friday, June 23, downtown McComb will buzz with the energy of Chez Clay, my one-night pop-up restaurant. Topisaw General Store is one of McComb’s best-known lunch spots, and its owners have graciously allowed Chef Clay to set up shop for this special culinary event.
For those of you who knew but forgot, there was a period when I made my living by cooking, and before that I earned a degree (with high honors) at the Cooking & Hospitality Institute of Chicago. One likes to think one’s chops are solid, and I’m no exception.
